Jo (Jordan) Bierman, RD, LDN

Hi, I’m Jo (Jordan) Bierman, RD, LDN, a Registered Dietitian with a passion for helping both children and adults achieve their health and nutrition goals. I specialize in adult and pediatric weight management, diabetes, gastrointestinal disorders, and a range of pediatric health concerns—including picky eating, infant solid food introduction, formula feeding, and poor weight gain. My approach is holistic and compassionate, guiding families toward making informed, empowering food choices that support overall well-being.

I began my career at Cincinnati Children’s Hospital in 2018, where I helped families create practical, affordable meals. In 2021, I relocated to Seattle and joined Swedish Medical Center’s Pediatric Specialty Clinic, collaborating with GI specialists to educate patients on food allergies, Celiac disease, Irritable Bowel Disease, and growth concerns. Most recently, in 2023, I joined the Pediatric Endocrinology Clinic at the Medical University of South Carolina, where I support families in managing pediatric diabetes through nutrition. Over the past year, I’ve expanded my reach by working with remote private practices, allowing me to connect with and support families and individuals across the country.

Art Espidol, MS, RDN

I began my healthcare career as a Hospital Corpsman (medic) in the U.S. Navy, where I proudly served for five years before being honorably discharged. Following my military service, I pursued my passion for nutrition by earning a Bachelor of Science in Nutrition and Food Science from California State University, San Bernardino. I then continued my education at Loma Linda University, where I completed both my Master of Science degree and dietetic internship.

My professional journey began at Pomona Valley Medical Center, where I gained valuable experience as a clinical dietitian for two years. I then transitioned into the role of Renal Dietitian, a position I held for seven years through 2024. During this time, I developed a strong specialization in managing complex nutritional needs, particularly in the areas of diabetes, renal disease, bariatric nutrition, and oncology.

Alyssa May, MS, RDN

Hi, I'm Alyssa May, a Registered Dietitian (RD) with a Master’s degree in Clinical Dietetics and a Bachelor’s degree in Applied Food and Nutrition from Grand Valley State University. I’m passionate about helping people build healthier relationships with food, improve their health, and find balance—without the stress of restrictive diets. Having personally navigated my own health journey, including managing digestive issues, I’m driven to support others through their unique challenges and empower them to feel confident in their food choices.

I provide personalized nutrition recommendations tailored to your specific needs, whether you’re working to improve gut health, manage chronic conditions, or simply develop a healthier mindset around food. I believe in a compassionate, non-judgmental approach, creating a safe space for you to explore and improve your relationship with food.

With my education and training, I utilize evidence-based practices to guide you toward sustainable, long-term behavior changes that support both your physical and mental well-being. My goal is to empower you to embrace mindful eating and food freedom while making lasting changes that fit your lifestyle and health goals.
